Beef Stroganoff

Here is the recipe I promised last week...trust me it's a good one. At my bridal shower, all of the ladies invited were asked to bring a recipe for me, which was a great idea!! I got so many wonderful tried and true recipes from the women I love most. This is one of them, and it quickly became a staple at our house. I've made a few changes...of course that's what makes a recipe great! So, here it is:

Beef Stroganoff

Ingredients:
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 jar pimentos (I have never made it with these...I've grown up in the South, never eaten a pimento and I'm scared to try them...there I said it.)
  • 3 T. green pepper, chopped (I use a whole pepper...more veggies)
  • 1 C. sour cream
  • 1 can cream of mushroom soup
  • 1 can of biscuits
  • salt and black pepper to taste
  • My addition, chopped mushrooms about 1/2 c. if I have them on hand and 1 clove chopped garlic...I have a problem
  • I've added diced serano chiles before too, they were very tastey
Instructions:

Preheat oven to 350 F.

Combine beef, onion, and green pepper [and mushrooms, garlic, chiles- really anything you want to add] in a frying pan, cook until beef is done, drain. Add pimentos if you are brave unlike me, sour cream, cream of mushroom soup, mix well and pour in to oven proof casserole dish (2 qt works well). Cook uncovered for 30-40 minutes, remove from oven top with biscuits and return to oven until biscuits are cooked and golden brown on top, about 10 minutes.


If you are lazy like me and don't like unnecessary dishes- use a cast iron skillet.
