One of my goals was to make healthy, yummy meals for my family more often...
So, I found this super yummy recipe (there are MANY more on her website I want to try!!) and decided to try it out for dinner last night. One word...YUM! I made a few modifications: I added mushrooms, because I add mushrooms to everything. I.love.mushrooms. Mushroom pizza, mushrooms on my burger, mushrooms in my salad, mushrooms with spaghetti, mushrooms sauteed on steak...I could go on. I also added some fresh spinach, why not add some more veggies if you can cover them with sauce and cheese (they are still good for you, right?). I added both of these when I added the cooked meat to the cooked noodle/ sauce combo. Both the mushrooms and spinach were uncooked, I let the oven do the work on them. But it turned out great, it was super easy, and got very high remarks from the hubby!!
My newest interest is to learn about canning and preserving. My grandmother used to send us the most delicious apricot preserves and I would love to learn this wonderful skill. I am counting down the days until summer's bounty of fresh garden produce is readily available to can, can, can!! But for now, I'm reading books and blogs to learn what I can, and scouring the internet for deals on supplies. I am really excited to pursue this adventure! I'll keep you posted, wish me luck!
