Happy Fall Y'all

With fall just around the corner, I decided to add some seasonal decor around the apartment:





This is kind of hard to see, it has amber/ brown glass stones and leaves inside.








This isn't decor, it's dinner! I made chicken parmesean the other night and it was delicious. I love pasta!! It was quite simple too.

Chicken Parmesean
Preheat oven 375 degrees.
1 lb. boneless, skinless chicken breasts 4-6 pieces (I use the thin cut)
Coating:
In three separate breading dishes:
Dish 1: 1 c. all-purpose flour
Dish 2: 2 eggs, beaten
Dish 3: 1 c. Italian seasoned breadcrumbs &
1/4 c. grated Parmesean cheese
Topping:
(these are estimates- judge based on the size of the chicken pieces)
2 tbsp. marinara sauce
2 tbsp. shredded mozerella
1 tbsp. grated parmesean

Dredge the chicken in the flour, eggs, and breadcrumb mix. Heat 2 tbsp. oil in a large skillet (I use a large 2-burner griddle) so I can cook it in one batch :) Sautee the chicken until golden brown on both sides ~2 min per side (It will finish cooking in the oven)

After sauteing, place on a baking sheet. Assemble toppings on top of cooked chicken. Bake 5-10 minutes until chicken is done and cheeses are melted and golden brown.

Garnish with herbs as desired- I only had dried oregano on hand, but it was delicious!

Serve with spaghetti and tossed green salad.
