I love to cook.

I. LOVE. TO. COOK. It's relaxing, it's theraputic, and most importantly when I'm finished cooking there is something for me to eat. I.LOVE.TO.EAT. It's up there on my list of favorite things to do.

I'm not sure when I started to cook. It was probably some time between learning to walk and riding a bike. I have some very found memories cooking with my family. My sister and I used to make "creations" at my grandmother's house and then force my dad to eat them...maybe we are partially to blame for that heart attack :(. He's still alive (and I thank God every day), so I guess it wasn't too bad! One of my first memories of my mom's Kitchen Aid mixer involved flying red potatoes on Thanksgiving...then we found the shield attachment.

Cooking is my creative outlet, I can create, mix, mash, flip, fry, bake, saute...you get the point. It's just plain fun. Is there a point to this little soliloquy you ask? no, but there is a recipe!


I'm pretty famous for it, so I figured it was 'bout time I shared it...

 My Famous "Nacho" Chicken

Ingredients:
1 lb boneless skinless chicken breast (about 4)
2 cups crushed Doritos chips (your favorite flavor)
3/4 cup mayo
3/4 cup salsa
1 tsp taco seasoning (or hot sauce/ taco sauce)

Directions:
Preheat oven to 400 degrees/ 375 for non-stick pans.
You'll need two shallow pans, pie pans work well.
Pan #1: mix together salsa, mayo, and taco seasoning/sauce. Pan #2: place crushed up Doritos.
Dredge chicken in pan #1, then coat with crumbs from pan #2. Repeat until all chicken coated. Place in 9x13 pan sprayed with non-stick cooking spray. Bake until chicken is cooked through. 25 to 30 minutes depending on chicken thickness. This also works great for chicken tenders too, just adjust cooking time.
This is a real crowd pleaser, the chicken stays very moist...and it's kind of healthy.

  1. Hehehehe- our creations!! I made a creation last night and thought about our creations at Memaws- I think mine from last night was a little better though... I concur with all of your previous statements about loving to cook and eat :) Your nacho chicken looks tasty! as does that salad!!
